Anne's Squash Casserole

Recipe from Anne Wahab

Yield: 6 servings

Ingredients:

1 1/2 lb. yellow squash, cooked and drained
1 medium onion, chopped
2 carrots, grated
1-2 ounce jar pimento, drained
1 cup sour cream
1 can cream of chicken soup
1 stick butter, melted
salt
pepper
2 cups cornbread stuffing

Directions:

Mix all ingredients except stuffing. Put 1 cup stuffing in 2 quart buttered casserole dish.
Layer squash mixture.
Top with remaining stuffing.
Bake 350°F for 30 minutes.
