Anne's Squash Casserole

Yield: 6 servings
Ingredients:
- 1 1/2 lb. yellow squash, cooked and drained
- 1 medium onion, chopped
- 2 carrots, grated
- 1-2 ounce jar pimento, drained
- 1 cup sour cream
- 1 can cream of chicken soup
- 1 stick butter, melted
- salt
- pepper
- 2 cups cornbread stuffing
Directions:
- Mix all ingredients except stuffing. Put 1 cup stuffing in 2 quart buttered casserole dish.
- Layer squash mixture.
- Top with remaining stuffing.
- Bake 350°F for 30 minutes.
